salted fish with pumpkin from Lampung
150g salted fish (ikan asin jambal)
50 g mushrooms
2 salam leaves
2 stalks lemongrass
3 cloves garlic
600 ml santen cair (thin coconutmilk)
1 bunch kemangi
4 red chilies
2 cm laos
1 tsp shrimp paste
1/2 tsp salt
1 tsp palm sugar
Cut the fish and pumpkin into cubes, the garlic and the shallots into thin slices. Pound or grind the ingredients for the bumbu fine into a paste. Heat in a pan some oil and fry the fish.
Heat in a pan the santen with the paste, the salam, the lemongrass, garlic and shallots and cook for 5 minutes. Add the pumpkin and cook it nearly done. Add the corn and mushrooms and cook until tender. Add the fish and the kemangi leaves and cook slowly until done and serve.
