devil's chicken

1 chicken (900 gr)
3 shallots
3 cloves garlic
2 cabe merah (large chilies)
10 cabe rawit (small chilies)
2 tbsp kecap manis (dark sweet soy sauce)
1 tsp palmsugar (gula jawa)
1 lime (juice)
1 tsp salt
200 ml chicken stock (see recipe)
4 tbsp oil

Cara membuat:
cut the meat into pieces. Rub it in with the salt. Pound or grind the shallots, the garlic, both chilies fine into a paste. Heat in a wok the oil and fry the chicken golden brown. Remove it form the wok and drain it on kicthen paper. Fry in the remaining oil the paste for 3 minutes. Add the stock, the kecap and the gula. Then add the chicken and let it simmer slowly and covered for 30 minutes. Mix in the limejuice and serve. If it becomes too dry then add a little extra stock.
