Gulai Sapi Kacang Merah
Beef with red bean curry

600g beef
3 cm cinnamon
2 cardamom
2 cloves
1 lemongrass stalk
5 jeruk purut
2 salam leaves
750 ml water
2 tsp salt
2 tsp palm sugar
4 tbsp asemwater
125g kacang merah (red beans)
400ml coconut milk
4 tablespoons oil
4 shallots
7 cloves garlic
8 red chilies
3cm jahe
3 cm laos
2 tsp ketumbar
1/4 teaspoon nutmeg
1/4 teaspoon jinten
1/4 teaspoon kunyit
Cara membuat:
Pound or grind the ingredients for the bumbu fine into a paste. Cut the meat into cubes and the lemongrass into 4 pieces.
Heat in a pan the oil and fry the paste with the cinnamon, the cardamom, the cloves, the lemon grass, the jeruk purut and the salam for 5 minutes. Add the meat and fry it brown.
Then add the water with the salt, palm sugar and asem water and bring to a boil. Then simmer slowly covered for 45 minutes. Add the beans and coconut milk and bring to a boil. Then let it simmer uncovered for another 45 minutes until everything is cooked and the sauce is reduced by half.
