Balinese fried duck
Bahan-Bahan:
ingredients:
1 duck
1200 ml of coconut water
7 salam leaf
1 serai / sereh / lemongrass, white part
oil
Haluskan:
bumbu:
7 cloves of garlic
3 shallots
2 kemiri nuts, roasted
7 cm lengkuas / galangal
1 tbsp ketumbar, roasted
7 cm kunyit, roasted
1/2 tsp terasi / trasi bakar
1 tsp salt
1 tsp palmsugar

Cara membuat:
preparation:
Clean the duck and cut it into 4 parts. Pound or grind the ingredients for the bumbu into a paste. Marinate the duck with the paste and let it marinate it at least 12 hours.
Heat in a pan the coconut water together with the marinated duck, the salam and the serai and cook on low heat for 90 minutes and until the liquid has thickened. Remove the duck from the pan.
Heat the oil in a pan and fry the duck until tender and crispy. Serve it with the sambal.
