Bebek Geprek Sambal Matah
Fried spicy duck with sambal sauce

1 duck
2 salam leaves
2 sereh / lemongrass, white portion
1000 ml of water

6 shallots
5 cloves of garlic
3 kemiri/candlenuts
5 cm jahe
1/2 tbsp ketumbar
1/2 tsp salt

Bahan Sambal Matah:
Ingredients sambal sauce
6 shallots
3 cloves of garlic
10 red rawits
1/2 tsp trassi
2 jeruk purut leaves
2 sereh / lemongrass, white portion
1 tbsp lime juice
3 tbsp hot oil

Cara Membuat:
Cut the duck into 8 pieces. Pound or grind the ingredients for the bumbu into a paste. Heat in a pan the water with the salam, sereh and bumbu and bring to the boil. Then add the duck and cook the duck nearly done. Spoon the duck out of the pan and allow to cool.
Heat in a pan sufficient oil and fry the duck brown and cooked. Then spoon the sambal matah on top the duck and serve.

Sambal Matah:
Cut the shallots, the garlic, the rawits, the jeruk purut and the sereh fine. Mix it first with the trassi and the lime juice and then stir the oil through.
