Nam Chim Kai
sweet and sour chili sauce

Ingredients:
150 ml rice vinegar
150 gr cane sugar
150ml water
3 tbsp fish sauce
2 tbsp rice wine
4 cloves of garlic
1 tbsp lime juice
1-2 tsp chili flakes

Preparation:
Chop the garlic very fine. Mix all ingredients in a pan. Bring to the boil and let it simmer gently for 20 minutes until it starts to thicken. Then let it cool down before using.
