Urap Sambal Mentah
mixed vegetables with spicy sauce

150 g cabbage
300 gr bayam / wild spinach
150 g snake/long beans
150 gr bean sprouts
4 shallots
3 red lomboks
10 jeruk purut leaves
8 cm kencur
1 tsp salt
1 tsp palmsugar
1 tsp pepper
100 ml thick coconut milk (kental, from 1/2 coconut)
4 tbsp oil

Cara membuat:
Cut the cabbage and the beans into pieces. Then steam the vegetables until done or al dente.
Cut the shallots, the lomboks and the jeruk purut into thin slices. Pound or grind the kencur to a paste. Heat the oil in a pan and fry the shallots, the lomboks, the jeruk purut, the kencur, the palm sugar, the salt for 2 minutes. Then add the coconut milk and bring to the boil while stirring.
Mix the vegetables well and mix in the sauce.
