Beef stew with vegetables from Aceh

150g beef
150g spareribs (beef)
1 carrot
100g potatoes
75g purple eggplant (unpeeled)
3 tbsp cumin oil
4 green chilies (large)
50 g kacang panjang / garter
1/2 onion
5 cloves garlic
3 cm jahe, crushed
5 cm cinnamon
8 cardamom pods
10 cloves
5 curry leaves
1 pandan leaf
1 tomato
1500 ml water
5 shallots
4 cloves garlic
10 red chilies
1 tsp ketumbar
1/2 tsp jinten
1 tsp fennel
1/2 tsp peppercorns
1/2 nutmeg
1 tablespoon salt
Cara membuat:
Cut the garter into pieces of 5 cm. Cut the tomatoes into pieces and the onion and garlic into thin slices. Pound or grind the ingredients for the bumbu fine into a paste. Cut the carrots, potatoes, eggplant, meat and ribs into equal pieces.
Heat in a pan the oil and fry the onion, garlic, jahe, cinnamon, cardamom, cloves, the curry leaf, pandan leaf, tomato and the paste for 5 minutes. Add the meat and the ribs and mix well. Pour in the water and cook the meat medium well. Then add the carrot, potato, beans, the chilies and the eggplant and simmer until tender.
