Mi Ga Ti
Noodle curry

250 gr minced chicken 
4 tbsp red curry paste (see recipe)
4 tbsp peanuts
3 tbsp fish sauce (Nam Pla)
3 tbsp cane sugar
1 tsp salt (or to taste)
300 ml coconut milk
200 ml water
200 gr rice noodles (mihun)

too serve with:
100 gr cabbage
50 gr cucumber
50 gr string beans /  asperagus beans
100 gr tettuce
2 tbsp coriander
20 gr mint leaves

Roast the peanuts in a frying pan and pound them in a mortar. Heat in a wok the coconut milk and add the curry paste and the chicken and cook it until the chicken is done. Then add the water, the fishsauce, the salt and the sugar and cook it for 10 minutes. Then add the peanuts to the sauce.
Soak the noodle first with warm water for 15 minutes and steam them for 5 minutes. Rinse. Slice the vegetables into bit size pieces. First place the vegetables on a plate and then add the noodles. Serve the sauce over the noodles and the vegetables until its covered and serve.
