Pepes ikan patin Palembang
steamed grilled catfish

800 gr catfish
2 lemon, juice
1 tsp salt
6 salam leaves
3 sereh (lemongrass)
2 bunches kemangi (basil)
3 spring onions
6 belimbing (star fruit)
banana leaves
biteng (tooth picks)

10 small red onion
6 cloves garlic
15 red lomboks, seeded
3 cm jahe (ginger)
3 cm laos (galangal)
2 kemiri (candlenuts)
1 tbsp salt
1 tbsp sugar

Cara membuat:
Clean the fish and marinate it with the salt and the lemon juice for 30 minutes. Cut the belimbing into slices and pluck the leaves from the kemangi. Cut the lemon grass and spring onions into slices. Pound or grind the ingredients for the bumbu fine into a paste. Mix the bumbu with the fish.
Place the fish on a banana leaf and sprinkle with kemangi, spring onion and belimbing. Fold the banana leaf close and fasten the ends with biteng. Steam the packets for 5 minutes. Then roast the packets above a charcoal fire until the fish is cooked and the leaves turn brown.
