spare ribs with lemongrass

500 gr spare ribs (pork ribs)

Ingredients marinate:
10 tbsp palmsugar
10 tbsp nam pla (fish sauce)
10 tbsp kecap manis (dark sweet soy sauce)
5-6 lemongrass
4 shallots
12 cloves garlic
5 tbsp santen (coconut milk)
3 tbsp sesame oil
1 tbsp szechuan pepper
5 tbsp whiskey

Slice the lemongrass, the garlic and the shallots very fine. Mix all the ingredients, except the santen. Heat in a wok the mixture and let it reduce. Mix in the santen and marinate the ribs with it for at least 3 hours. Remove the ribs. Roast/grill the ribs slowly for 20 minutes above a charcoalfire. Heat the marinate for at least 3 minutes and serve it with the ribs as a dipsauce.
