Babat masak kecap belimbing
fried beef tripe in a refreshing sour sauce

500g tripe (or other beef)
2 salam leaves
4 shallots
3 cloves garlic
2 green chilies
2 sereh/lemongrass
4 jeruk purut / kaffir lime leaves
1 tbsp kecap manis
1 tsp salt
1 tbsp palm sugar
6 belimbing (star fruit)
2 tbsp asemwater
400 ml water
2 tablespoons oil
Cara membuat:
Heat in a pan the water and cook the tripe with one salam leaf. Cut the tripe into pieces. Cut the shallots and garlic in slices, the chilies into strips and belimbing in half lengthwise.
Heat in a pan the oil and fry the shallots, garlic, chilies, the salam, the lemon grass, the jeruk purut for 3 minutes. Add the tripe followed by the kecap, salt and palm sugar. Then add the belimbing and the water and cook until the liquid is absorbed. Then mix in the asemwater and serve.
