Tahu Ketoprak
tahu/tofu with vegetables and spicy sauce

250 gr tahu/tofu
200 gr beansprouts
1/2 green cabbage
2 spring onions
5 sprigs celery leaves
500 ml water

Bahan-bahan saus:
ingredients sauce:
2 shallots
3 cloves garlic
3 cabe merah (large chilies)
1 tsp trassi (shrimp paste)
1 tsp gula jawa (palmsugar)
1 tsp salt
5 tbsp kecap manis (dark sweet soy sauce)
1 lime (juice)

bawang goreng (fried onions)

Cara membuat:
Slice the tahu in 8 pieces. Heat in a wok the oil and fry the tahu golden brown and let it drain on kitchenpaper. Heat in a pan the water and blanch the beansprouts and let it cool down. Slice the cabbage into thin strips and chop the sprin onions and the celery sprigs. Put the tahu on a plate and put the beansprouts, the cabbage, the spring onions and the celery on top. Pour the sauce over it and garnish it with the bawang goreng and serve.

preperation/method sauce:
Deseed the cabe and slice it fine. Slice the shallots and the garlic fine. Pound the shallots, the cabe and the garlic together with the trassi, de palmsugar and the salt. Mix it with the kecap and the lime juice.
