Kupat Tahu
ketupat with tofu in peanut sauce

1 tahu/tofu
100g bean sprouts
4 ketupat (steamed rice cakes in banana leaves)
Bahan saus kacang:
peanut sauce ingredients:
4 red chilies
4 red rawits
5 cloves garlic
125g fried peanuts
2 tbsp kecap manis
2 tbsp asam water
250 ml water
1 tsp salt
50g palm sugar
2 stalks celery
4 tbsp Bawang Goreng
kroepoek (prawn crackers)
Cara membuat:
Heat in a pan the water and blanch the bean sprouts and let it cool. Cut the tahu into cubes. Heat in a pan the oil and fry the tahu golden brown and let it then drain on kitchen paper. Cut the ketupat into pieces. Cut the celery into thin slices.
Pound or grind the chilies, the rawits, garlic, peanuts, salt and palmsugar into a paste. Mix in the kecap, water and asam water and form a smooth sauce.
Mix the tofu, bean sprouts and ketupat and pour the peanut sauce on top. Garnish with bawang goreng, celery, crackers and serve.
