Soto Daging Bangkalan
soup from Bangkalan (Madura)

500 gr beef
1750 ml water
5 shallots
4 cloves garlic
1 spring onion / stone leek
4 jeruk purut / kaffir lime leaves
1/2 tsp salt
4 tbsp oil

2 cm jahe (ginger)
4 cloves garlic
3 red lomboks
2 cm kuyit (turmeric)
1/2 tsp trasi (shrimp paste)
1/2 tsp pepper

hardboiled eggs
mihun (rice vermicelli)
bawang goreng (fried shallots)

Cara membuat:
Cook the meat in the water until soft and slice it into cubes. Slice the garlic, the shallots and the spring onion fine. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a wok the oil and fry the shallots, the garlic and the springonion for 2 minutes. Add the bumbu and fry it 1 minue more. Put the mixture together with the meat, the salt and the jeruk purut in the bouillon/stock and let it simmer slowly for 10 minutes.
Put some egg, mihun and sambal in the bowls and pour the soup on top. Sprinkle bawang goreng on top and serve.
