spicy beef soup

1000 gr beef
2000 ml of water
3 lemongrass stalks, green part
10 jeruk purut
4 salam leaves
6 cm cinnamon sticks
1 star anise
1/2 teaspoon nutmeg
1 tsp salt
4 tablespoons oil
5 shallots
7 cloves garlic
3 stalks lemongrass, white part
3 cm laos
3 cm jahe
1 tsp pepper
1 tsp ketumbar
1/2 tsp jinten
1/2 tsp kunyit
2 spring onions, thinly sliced
4 sprigs coriander leaves
3 tbsp Bawang Goreng
1 lime, wedges
kecap manis, to taste
sambal badjak, to taste
Cara membuat:
Cut the meat into pieces and pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the water along with the meat, the lemon grass, the jeruk purut, the salam, cinnamon, star anise and nutmeg. Then let it simmer slowly for 90 minutes until the meat is cooked.
Heat in a pan the oil and fry the paste for 5 minutes. Add this to the meat with the salt and cook for another 10 minutes.
Ladle the soup into bowls and garnish to taste.
