chicken in coconut milk soup

900 gr chicken breast / thighs
750 ml chicken broth (see recipe)
500 ml of coconut milk
2 serai / sereh / lemongrass
1 tsp salt
1/2 tsp palmsugar
1/2 tsp pepper
6 jeruk purut leaves
2 spring onion
5 sprigs of coriander (leaves)
3 tbsp oil

5 shallots
3 cloves of garlic
3 cm jahe
1/2 tsp ketumbar
3 cm kunyit
1/4 tsp jinten
1 tsp / trasi bakar
3 red lomboks
5 red rawits

Cara membuat:
Cut the meat into thin strips. Slice the jeruk purut, the spring onion and the coriander finely. Pound or grind the ingredients for the bumbu into a paste.
Heat the oil in a pan and fry the bumbu with the serai for 3 minutes. Then add the meat and fry until it changes color. Then add the stock, half of the coconut milk, the salt, the palm sugar and the pepper and bring to the boil. Then simmer slowly and cook the meat until done. Then add the other half of the coconut milk, followed by the jeruk purut, the spring onion and the coriander and simmer for 1 minute more. Serve.
