laksa Jepara style

1 chicken breast
150g prawns
1000 ml chicken stock (see recipe)
250 ml santen asli
2 stalks lemongrass
5 jeruk purut
1 tablespoon salt
1/2 tbsp palm sugar
2 eat oil
7 shallots
3 cloves garlic
3cm kunyit
2cm jahe
1/2 tbsp ketumbar
1/2 teaspoon pepper
1/4 teaspoon jinten
4 red chilies
1 tsp shrimp paste bakar
2 eggs
2 stalks celery
2 stalks chives
Cara membuat:
Cut the chicken into pieces. Clean the prawns but leave the tail. Chop the celery and chives and spread the eggs into wedges. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the oil and fry the paste with lemongrass and jerut purut for 5 minutes. Add the chicken and the shrimp and fry for 3 minutes. Add the broth and bring to a boil. Add the santen, the salt and palm sugar and cook until tender. Sprinkle with chives and celery and serve with the egg parts.
