meat soup from Medan
750 gr goat / lamb / mutton with bone
2500 ml water
6 cloves garlic
3 cm jahe
2 stalks celery
2 star anise
1 tsp pepper
2 cm cinnamon
1/2 grated nutmeg
1/2 tsp salt
2 stalks celery leaves (finely chopped)
3 spring onions (finely chopped)
3 tbsp bawanng goreng
Slice the shallots and garlic finely. Cut the carrots into large chunks and celery into small pieces. Cut the tomatoes into pieces.
Heat in a pan the water add all ingredients except the meat and the tomatoes and let it cook for 5 minutes. Add the meat and let it cook for 5 minutes. Then close the lid an let it simmer gently for at least 3 hours. Add 15 minutes before serving the tomatoes and sprinkle with celery, spring onions and bawang goreng on top and serve.
The soup is on its best the next day!
