Sup Kambing Pedas
spicy meat soup

750 gr lamb
1500ml water
3 cm jahe/ginger
2 tsp salt
4 cm cinnamon
3 cloves
1 nutmeg
2 spring onions
3 tomatoes
2 celery (small)
3 tbsp oil

9 shallots
4 cloves of garlic
3 red lomboks
2 red rawits
1 tsp pepper

2 tbsp bawang goreng
lime, wedges

Cara membuat:
Cut the meat into pieces. Chop the nutmeg finely, cut the spring onion into pieces and the tomatoes into wedges. Cut the celery into thin slices. Pound or grind the ingredients for the bumbu into a paste.
Heat in a pan the water together with the jahe, the salt and the meat and bring to the boil. Then stew the meat over low heat and covered until done and set aside. Strain the stock and reserve 1200 ml and add the meat back to the stock.
Heat the oil in a pan and fry the bumbu together with the cinnamon, cloves and nutmeg for 6 minutes. Then add it to the stock and bring it to a boil. Then add the spring onion and tomatoes and cook over low heat and until soft.
Sprinkle over the bawang goreng and celery and serve with the lime wedges and emping.
