Black beef soup from Permalang

300g beef (breast)
300g ribs (beef)
2500 ml water
2 stalks lemongrass
2 salam leaves
1 1/2 tbsp salt
1/2 tsp pepper
1 tsp palm sugar
1 spring onion
2 tablespoons oil
50g grated coconut
2 piece kluwek nuts
2 cm kunyit
1 1/2 tsp ketumbar
6 shallots
5 cloves garlic
1 cm jahe
2 tbsp Bawang Goreng
Bahan sambal:
15 pieces of red rawits
3 cloves garlic
1/8 tsp salt
Cara membuat:
Roast the coconut dry in a pan. Pound or grind the ingredients for the bumbu fine into a paste. Heat in a pan the water and add the meat, lemongrass and the salam and cook until tender. Scoop out the flesh and cut it into pieces. Leave behind 2000ml broth and add the meat again.
Heat in a pan the oil and fry the bumbu voo3 5 minutes and add it to the meat. Add the pepper, salt and palm sugar and cook until tender. Add the chopped onion, sprinkle the bawang goreng on top and serve it with the sambal
Boil the rawits and garlic for 2 minutes in some water. Drain. Pound or grind the ingredients for the sambal into a paste.
