papaya salad with a spicy duck dressing
Bahan-bahan:
ingredients:
400 gr green papaya
150 grated coconut
1 tbsp palmsugar
2 tbsp bawang goreng (fried shallots)
11 cloves garlic
2 red lomboks
3 red rawits
3 jeruk purut / kaffir lime leaves
water
1 tbsp oil
Bahan-bahan dressing:
ingredients dressing:
2 tbsp base gede (see recipe)
300 gr minced duck (breast, hart liver)
1 tsp black pepper
1/2 tsp salt
125 ml chicken stock (see recipe)
125 ml santen asli (thick coconut milk)
2 tbsp lime juice
2 tbsp oil
Taburan:
garnish:
1 tbsp bawang goreng
Cara membuat:
preperation/method;
Mix the meat with the pepper and the salt. Heat in a wok the oil and add the base and the meat and fry it done. Add the santen and the stock and let it simmer for 2 minutes. Then mix in the lime juice and let it cool down.
Slice the papaya into strips. Heat in a pan the water and blanche the papaya and drain. Cut/chop the garlic fine, and slice the lomboks and the rawits into strips. Heat in a wok the oil and fry the garlic, the lomboks and the rawits golden brown. Heat a skillet and roast the coconut golden brown. Mix all ingredients well and mix in the dressing. Garnish it with the bawang goreng and serve.
