Lodeh Pepaya
papaya with vegetables in creamy coconut milk sauce

250g papaya
2 carrots
5 kacang panjang / snakebeans
150g shank (beef)
2 salam leaves
2 cm laos
3 green chilies
3 tsp salt
1 tsp palm sugar
1000 ml water
1000 ml santen
2 tablespoons oil
4 red chilies
5 shallots
3 nuts kemiri
1/2 tsp ketumbar
1cm kunyit
1/2 tsp trasi bakar
Cara membuat:
Cut the papaya into thin strips (julienne), the snakebeans into pieces and the carrots into slices. Roast/grill the green chilies and cut it into strips. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the waer and cook the meat until done. Cut the meat into pieces. Heat in a pan the oil and fry the paste with the salam and galangal for 5 minutes. Add the lomboks, papaya, carrot and beans and stir well. Add the salt, palm sugar and the meat followed by the santen. Cook while stirring until done and serve.
