Sayur Labu Air Kuah Santan
stewed pumpkin/gourd in a spicy sauce

350 gr labu air / bottle gourd
2 tbsp udang rebon, soaked and roasted
50 gr melinjo leaf
1 tomato
2 salam leaf
2 cm lengkuas / laos / galangal
1 serai / sereh / lemongrass
1250 ml coconut milk
1 tsp palm sugar
1 tsp salt
2 tbsp oil

4 shallots
4 cloves of garlic
2 kemiri nuts
7 red lomboks

Cara membuat:
Peel the gourd and cut them into cubes. Cut the tomato into pieces. Pound or grind the ingredients for the bumbu into a paste. Mix the gourd with the rebon, melinjo and tomato and set aside.
Heat the oil in a pan and fry the bumbu together with the salam, the lengkuas and the serai for 5 minutes. Then add the gourd mixture and mix well.
Then add the coconut milk, the palm sugar and the salt and bring it to the boil while stirring and cook it until done. Serve.
