Sayur Labu Campur
spiced stewed chayote

200g labu siam / chayote
4 garter
100g tahu
100g carrots
2 green chilies
2 red chilies
1 tomato
2 cm laos
1 salam leaf
1 tsp salt
1 tsp palm sugar
1750 ml coconut milk
2 tablespoons oil
4 red chilies
4 shallots
4 cloves garlic
1cm kunyit
1 tsp ebi, soaked and roasted
Cara membuat:
Cut the chayote into strips, the tahu into cubes, carrot julliene, the chilies into rings, the garter and the tomatoes into pieces. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the oil and fry the paste with the salam and galangal for 4 minutes. Add the coconut milk, the chilies, salt and palmsugar and bring to the boil. Add the garter, the tahu, the chayote, the carrot and tomato and cook gently until tender.
If preffered, the tahu/tofu can also be fried first before it is added.
