Sambel Goreng Labu Siam (Surakarta)
chayote in creamy spicy sauce

2 labu siam / chayote
100 gr shrimp
12 petai / petah beans
100 ml of water
500 ml thick coconut milk (kental)
4 cloves of garlic
5 shallots
5 red lomboks
2 salam leaves
3 cm lengkuas / galangal / laos
2 tsp palmsugar
1/2 tsp salt
4 tbsp oil

Cara membuat:
Peel the chayote and cut it julienne. Clean and peel the shrimp. Deeed the lomboks and cut them into thin strips. Finely chop the shallots and garlic.
Heat the oil in a pan and fry the shallots, the garlic, the lomboks, the salam and the laos for 5 minutes. Then add the palm sugar, the shrimp, the petai and the chayote and fry until the shrimp change colour.
Then add the water and cook the chayote half-done. Then add the coconut milk and the salt and cook it on low heat until done.
