spicy stewed nangka / jackfruit

500 g nangka / jack fruit
750 ml thin coconut milk (encer)
6 cm Lengkuas / galangal
2 salam leaf
1 serai / sereh / lemongrass
1 kunyit leaf

2 shallots
2 teaspoon salt
2 tsp palmsugar

Peel the nangka and cut into cubes / slices. Pound or grind the ingredients for the paste into a paste.
In a wok, heat the coconut milk together with the bumbu, the laos, the salam, the serai and the kunyit leaf. Then add the nangka and close the pan and cook over medium heat until the nangka is cooked and the sauce has thickened or nearly evaporated.
