fried eggplant with green pepper
Bahan-Bahan:
ingredients:
400 gr terong unge / thin purple eggplant
50 gr ikan teri, soaked
2 salam leaves
1 serai / sereh / lemongrass
5 jeruk purut leaves
1/2 teaspoon of salt
1/2 teaspoon sugar
3 tbsp oil
Haluskan:
bumbu:
3 shallots
3 cloves of garlic
6 green lomboks
1 green tomato (small)
Cara membuat:
preparation:
Cut the aubergine/eggplant into pieces. Pound or grind the ingredients for the bumbu fine to a coarse paste. Heat the oil in a pan and fry the bumbu together with the salam, the serai and the jeruk purut for 4 minutes. Then add the eggplant and mix. Then add the salt and the palm sugar and mix well. Then add the ikan teri and fry until done.
