Kangkung Balacan
kangkung seasoned with eggs

3 bunches kangkung
8 quail eggs, hard boiled
2 red chilies
1 tomato
1/2 tsp salt
1/2 teaspoon pepper
1/2 tsp palm sugar
50 ml of water
1 tbsp oil
3 shallots
2 cloves garlic
2 red chilies
1 1/2 tsp shrimp paste
Cara membuat:
Clean the kangkung and cut it into large pieces. Cut the chilies in slanting rings and dice the tomato. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the oil and fry the bumbu for 3 minutes. Add the Lombok and tomato and fry gently until soft.
Add the kangkung and eggs followed by the salt, pepper and palm sugar. Toss well. Then add the water and cook slowly until done.
