mushrooms with vegetables and black beans
100g oyster mushrooms
5 quail eggs, cooked and peeled
1 tbsp taosi (black bean paste)
4 cloves garlic
2 red chilies
1 green lombok/chilie
1/4 tsp salt
1/4 teaspoon pepper
1/2 tsp palm sugar
1 spring onion
10 ml of water
2 tablespoons oil
Cut the mushrooms into thin strips, the cauliflower into small florets and chop the garlic and chilies finely. Cut the onion into strips and spring onion finely .
Heat in a pan the oil and fry the garlic and onion for 2 minutes. Add the chilies and fry until soft. Add the taosi and mix well. Then add the oyster mushrooms, cauliflower and the eggs and mix well. Then add the water, the salt, the pepper and palm sugar and cook until tender. Sprinkle the spring onion on top and serve.
