Urap Kenikir
marigolds with spiced grated coconut

200g marigolds (kenikir), cooked
50g anchovy
25 gr peteh beans
150g grated coconut
50 g bean sprouts
75g carrot
2 jeruk purut
1 tsp salt
1/2 tsp palm sugar
2 tablespoons oil
5 shallots
3 cloves garlic
3 red chilies
2 red rawits
4 cm kencur
1 tsp shrimp paste
Cara membuat:
Cut the carrot julienne. Pound or grind the ingredients for the bumbu fine into a paste. Heat in a pan the oil and fry the bumbu with the jeruk purut for 5 minutes. Add the coconut and mix well. Add the kenikir, the anchovies, the peteh, the bean sprouts and carrots and mix well. Add the salt and palm sugar and cook until tender and done.
