Stew of lamb

500 gr lamb rack/ribs
500 gr lamb offal
4 cm jahe
4 cm laos
2 sereh / lemongrass
4 jeruk purut leaves
2 salam leaves
3 cm cinnamon
6 cloves
1 tsp salt
3 tbsp kecap manis
1000 ml of boiled water
4 tbsp oil

8 shallots
7 cloves of garlic
6 cm kunyit
6 kemiri/candlenuts
1 nutmeg (whole)

2 tablespoons goose goreng

Cara Membuat:
Heat in a pan sufficient water and cook the lamb rack for 3-5 minutes and remove the froth and dirt. Spoon the lamb rack out of the pan and set aside. Cut the offal meat off into small pieces and cook for 3-5 minutes and remove the froth and dirt and set aside.
Pound or grind the ingredients for the bumbu into a paste. Heat in a pan the oil and fry the bumbu together with the jahe, the laos, the sereh, the jeruk purut, the salam, the cinnamon and the cloves for 5 minutes. Then add the lamb rack and the offal and mix well.
Then add the boiled water and bring to the boil. Then simmer slowly until it is completely cooked. Then spoon in the salt and the kecap. Sprinkle the bawang goreng on top and serve.
