Kembung Balado Hijau
fried mackerel in green pepper sauce

5 mackerel
1 tsp lemon juice
1 tsp salt
4 cloves of garlic
2 jeruk purut leaves
1 cm lengkuas/laos/galangal
2 salam leaf
1/2 tsp palm sugar
50ml water
4 tbsp oil

4 shallots
4 cloves of garlic
12 green lomboks
2 green tomatoes
1 tsp terasi/trasi

Cara membuat:
Mash the garlic and mix it with the salt and lime juice and rub it into the cleaned fish. Let it rest/marinate for at least 30 minutes. Pound or grind the ingredients for the bumbu coarsely.
Heat the oil in a pan and fry the fish until done and remove it from the pan. Then add the bumbu, the jeruk purut, the salam and the galangal and fry for 5 minutes.
Then add the fish, salt and palm sugar and mix well. Then add the water and cook, while stirring, until the moisture has evaporated. Serve.
