fried squid as from Bali

1200 grams cumi / squid / calemari
2 tsp lime juice
1/2 teaspoon ground pepper
1 tsp salt
3 shallots
2 red chilies
2 salam leaves
1/2 tsp salt
1/2 tsp palm sugar
1 tbsp asemwater
250 ml water
3 tablespoons oil
3 cloves garlic
4 shallots
3 red chilies
3 candlenuts
2 cm kunyit
1 sereh/lemongrass
2 cm jahe
1/2 tsp ketumbar
1 tsp shrimp paste
1 tbsp Bawang Goreng
Cara membuat:
Clean the squid and remove the skin, marinate it with lemon juice, salt and pepper and let stand for 15 minutes. Slice the shallots and chilies finely. Pound or grind the ingredients for the bumbu fine into a paste.
Heat in a pan the oil and fry the bumbu with the shallots, chilies and salam for 5 minutes. Add the squid and cook until the color changes. Then add the salt and palm sugar. Add the water and simmer until tender. Stir the asemwater in it. Sprinkle the bawang goreng and serve.
