Tutut Kuah Kuning
snails in yellow sauce

1000 gr rice snails
500 ml water
200 ml thin coconut milk (encer)
2 salam leaf
2 jeruk purut leaves
1 serai/sereh/lemon grass
1 tsp salt
1 tsp palm sugar
16 red rawits
1 spring onion
2 tbsp oil

6 shallots
4 cloves of garlic
2 kemiri nuts
3 cm kunyit
2 cm jahe

Cara membuat:
Clean the snails well. Finely chop the spring onion. Pound or grind the ingredients for the bumbu into a paste.
Heat the oil in a pan and fry the bumbu for 4 minutes. Then add the salam, the jeruk purut and the serai and fry for another 3 minutes. Then add the snails and mix well. Then add the water and bring to a boil.
Then add the rawits, salt and palm sugar and cook the snails until done. Mix in the encer and bring to a boil. Then mix in the spring onion and serve.
