Lele Goreng Saus Kecap
fried catfish in kecap sauce

1000 gr ikan lele / catfish
3 limes (juice)
8 shallots
6 cloves garlic
5 red lomboks (large chilies)
5 green lomboks
3 tomatoes
7 belimbing wuluh (sour starfruit)
5 cm jahe / ginger, crushed
4 cm laos / galangal
1 sereh / lemongrass
3 salam leaves
1 tsp palmsugar
5 tbsp kecap manis (dark sweet soy sauce)
salt to taste

Cara membuat:
Cut the fish in parts and rub it in with the salt and the lime juice and let it stand for 15 minutes. Deseed the lomboks and cut the in large pieces. Cut the shallots, the garlic and the belimbing into thin slices and the tomatoes into parts.
Heat in a wok the oil and fry the fish golden brown and remove them and let in drain on kitchen paper. Pour out the oil but leave 5 tbsp behind. Fry the shallots and the garlic for 3 minutes. Add the lomboks. the jahe, the salam and the sereh and fry it for 5 minutes. Then add the tomatoes, the belimbing and the kecap and fry it for 3 minutes more. Pour the sauce over the fish and serve.
