roasted spiced black pomfret
1000 gr bawal hitam / parastromateus niger / black pomfret (4 pieces)
1 lime, juice
9 kunyit leaves
3 tbsp oil
3 cloves of garlic
4 red cabai keriting (curly cayenne pepper)
3 kemiri nuts
4 cm kunyit
2 tsp salt
Clean the fish and remove the gills and stomach and scare the fish. Rub the fish with the lime juice.
Pound or grind the ingredients for the bumbu fine into a paste and mix the oil. Divide the bumbu into four portions and rub each fish in with it.
Wrap each seasoned fish with the kunyit leaves. Roast the fish gentlyslowly over a charcoal fire until done. Serve.
