dry fried anchovies with coconut from Papua NG
250 ikan teri / dried small anchovies
2 taro leaves
1/4 coconut, grated
1 tsp salt
2 tablespoons oil
Soak the ikan teri water. Cut the taro leaves finely. Heat in a pan the water and cook the taro until cooked, drain and squeeze the leaves.
Heat in a pan the oil and fry the anchovies until yellow and grind finely. Add taro, coconut and salt and stir well. Bake dry.
