beef ribs from Palembang

1000-1200 gr beef ribs
8 red shallots
5 cloves garlic
2 salam leaves
1 sereh (lemongrass)
3 cm kunyit (turmeric)
3 cm jahe (ginger)
2 cm laos (galangal)
1 tsp asem (tamarind)
3 red lomboks
3 green lomboks
1 tbsp kecap manis
1 tbsp kecap asin
salt to taste
1 tbsp dried kemangi leaves
1 tbsp dried green onion
1 tomato

Cara membuat:
Cut the ribs into pieces. Slice the shallots and the garlic fine. Slice the lomboks in a angle. Grate the kunyit, the jahe and the laos. Cut the tomato into parts. Heat in a pan enough water and add the ribs with the shallots, the garlic, the salam, the sereh, the laos, the kunyit and the jahe and let it cook slowly until the meat is soft. Add the asem, the kecaps and the salt followed by the lomboks and let it simmer slowly until the meat is cooked. Add the tomato, the kemangi and the green onion and remove it form the fire. Serve with rice.
