750 gr beef ribs
2000 ml water
2 sereh (lemongrass), crushed
2 salam leaves
1 tomato
1 tbsp kecap manis
2 tbsp salt
2 tsp palm sugar
2 tbsp asem water
2 tbsp oil
9 shallots
4 cloves of garlic
2 cm kunyit, roasted
3 cm jahe
2 cm laos
Cara membuat:
Heat in a pan the water, add the ribs and cook it until tender. Strain the broth and keep 1500ml of the stock. Pound or grind the ingredients for the bumbu fine into a paste. Cut the tomato into pieces.
Heat the oil in a pan and fry the bumbu, along with lemongrass and salem for 3 minutes. Add the ribs, the broth, the tomato, the kecap, the palm sugar and the salt and cook gently until tender. Mix in the asem water and serve.
