Pindang Iga Sapi Bakar
ribs in a spicy sauce

1000 gr ribs (beef)
1 lemon, juice
1 tsp salt
2 salam leaves
2 stalks lemongrass
2 red tomatoes
2 tsp asem
3 tbsp kecap manis
1/2 tbsp salt
1/2 tbsp palm sugar
2000 ml of water
7 shallots
5 cloves garlic
8 green chilies
3 red chilies
2cm kunyit
Cara membuat:
Cut the ribs into pieces and marinate it with salt and lemon juice and let it stand for 15 minutes. Roast the ribs over a charcoal fire until golden brown and set aside. Pound or grind the ingredients for the bumbu fine into a paste and cut the tomatoes into pieces.
Heat in a pan the water and add the ribs and cook it medium well. Drain the broth but leave 1500 ml of broth behind. Then add the paste, the salam and the lemon grass and let it simmer for 15 minutes. Add the tomatoes, the asem, the kecap, the salt and palm sugar and cook slowly until done.
