Gulai Kambing
Spiced Lamb

750 gr lamb
3 red onions
3 red rawits (chillipeppers)
5 cm ginger
1 lemongrass
3 cloves garlic
8 macadamia nuts
2 tomatoes
6 tbsp oil
1/2 tsp cardamom
1/2 tsp cumin 
1 cm kunyit (turmeric/kurkuma)
1/4 tsp fennel 
1 cinnamon stick
4 cloves
Salt to taste
black pepper to taste
1000 ml coconut milk

Cara membuat:
Slice the onions, the garlic and the rawits fine. Crush the lemongrass and slice the tomatoes into small cubes. Grind the macademia. Cut the lamb into bite-size chuncks. Rasp the ginger and the kunyit very fine.
Heat in a wok the oil and saute the onions, the rawits and the garlic. Then add the meat, the lemongrass, the ginger and the tomato and fry it for 3 minutes. Then add the other spices and the coconut milk and let in simmer slowlyt for 45-60 minutes until the meat is very tender.
