Gangan Rebung Daging Sapi

Bahan-bahan:
ingredients:
750 gr beef ribs
250 gr bamboo shoots, cooked
2 cm lengkuas/laos/galangal
2 salam leaf
100 gr grated coconut, toasted
500 ml coconut milk (from 1/2 coconut)
3 tbsp oil
water
Haluskan:
bumbu:
8 shallots
7 cloves of garlic
2 tsp ketumbar, toasted
1/2 tsp jinten, toasted
1/2 tsp caraway seeds
7 red lomboks
2 cm kunyit
3 kemiri/candlenuts
3 tsp salt
1 tsp palm sugar
Cara membuat:
preparation:
Cut the ribs into 5 cm pieces. Puree the grated coconut. Cut the bamboo shoots into thin strips. Pound or grind the ingredients for the bumbu into a paste.
Heat enough water in a pan with the meat and cook the meat until tender. Remove the meat from the pan and reserve 1000 ml stock.
Heat the oil in a pan and fry the bumbu together with the galangal and salam for 6 minutes. Then add the coconut and the meat and mix well. Then add the stock and coconut milk and bring to the boil while stirring.
Then add the bamboo shoots and continue cooking over low heat until the sauce thickens. Serve.
