Gangan asam daging
braised beef in sour sauce

500g beef shank
1700 ml water
8 pieces snake beans
4 green chilies
4 tsp salt
3 tbsp asemwater
3 tsp palm sugar
1/2 teaspoon pepper
2 tablespoons oil
1 tsp shrimp paste
2 cm kunyit
4 red chilies, seeded
6 shallots
1 cm galangal/laos
Cara membuat:
Cut the meat into pieces and the chilies into oblique strips. Pound or grind the ingredients for the bumbu fine into a paste. Cut the beans into pieces.
Heat in a pan the water and cook the meat until done. Drain, leaving 1500 ml broth behind. Heat in a pan the oil and fry the paste with lemon grass for 3 minutes. Add the broth, the meat, the beans, the chilies, salt, pepper and palm sugar and cook until tender. Mix in the asem water and serve.
