Rendang Ginjal
rendang of ox kidneys

750 gr ox kidney
2 cm jahe
3 cloves of garlic
1 tsp salt
2 tbsp asam water
5 shallots
2 red lomboks
4 cm cinnamon
2 tsp palm sugar
3 kemiri nuts, chopped
500 ml coconut milk (from 1 coconut)
4 tbsp oil

3 cm kunyit
2 tsp ketumbar
1 tsp jinten
1/2 tsp fennel seed
1/2 tsp pepper

Cara membuat:
Clean the kidney and cut it into cubes. Grate the jahe and garlic together with the salt. Rub the kidney with this mixture. Pound or grind the ingredients for the bumbu into a paste. Cut the lomboks into rings and the shallots into thin slices.
Heat the oil in a pan and fry the shallots until golden brown. Then add the bumbu and fry it for 1 minute. Then add the lomboks, the kemiri and the kidneys and fry until the kidneys change color.
Then add the coconut milk and the kemiri and let it simmer gently until the sauce has thickened and the liquid has almost been absorbed. Then mix in the asam water and palm sugar and let it simmer for a few more minutes. serve
