Gulai Sapi Padang
beef curry from Padang

500 gr beef shank
1000 ml of water
3 tbsp oil
3 salam leaves
2 asam kandis
1 sereh / lemongrass
2 cardamom
1 star anise
3 cm cinnamon
200 ml santen asli (thick coconut milk)

6 shallots
10 red lomboks
7 cloves of garlic
3 cm jahe
3 cm laos
3 cm kunyit
1/2 tsp pepper
1/2 tsp nutmeg
1/2 tsp ketumbar
1/2 tsp jinten
2 tsp salt
1 tsp palm sugar

Cara Membuat:
Heat in a pan the water and bring to the boil. Add the meat and the salam leaves and simmer for 60 minutes. Remove the meat from the pan and cut into pieces. Pound or grind the ingredients for the bumbu into a paste.
Heat in a pan the oil and fry the bumbu with the asam kandis, the sereh, the cardamom, the star anise and the cinnamon for 3 minutes. Add this to the broth and bring to the boil. Then add the coconut milk and bring to the boil. Add the meat and simmer for a further 60 minutes until the meat is done and the sauce has thickened.
