Sambal Goreng Lidah
tongue with potatoes in spicy sauce
Bahan-bahan:
Ingredients:
500 gr tongue (bovine)
4 salam leaves
2 cm jahe
2 cm laos
2 red lomboks
2 green lomboks
10 peteh beans (stink beans)
150 g potatoes
2 tsp salt
1 tbsp palm sugar
1 tbsp asamwater
250 ml santen asli (thick)
500 ml santen cair (thin)
2 tbsp oil
water
Haluskan:
Bumbu:
3 shallots
3 cloves of garlic
7 red lomboks
2 cm kunyit
3 kemiri/candlenuts
1/2 tsp trasi/shrimp paste
Cara Membuat:
preparation:
Pound or grind the ingredients for the bumbu into a paste. Cut the potatoes into small cubes and the lomboks in thin rings. Halve the peteh beans
Heat in a pan water and cook the tongue for 15 minutes and remove the skin. Heat in a pan 1000 ml water and cook the tongue together with 2 salam leaves and the jahe for 30 minutes. Then cut the tongue into thin strips.
Heat in a pan the oil and fry the bumbu with the salam and laos for 4 minutes. Then add the lomboks and peteh and fry until soft. Then add the tongue and the potatoes and mix well.
Then add the salt, the palm sugar and the santen cair and cook until nearly done. Then add the santen asli and stir until everything is cooked and the sauce has thickened. Then mix in the asam water and serve.
