Sambal Goreng Hatis Sapi Keluak
Stew with beef liver
Bahan-bahan:
Ingredients;
500 gr bovine liver
2 cm laos/galangal
200 gr of potatoes
1 tsp salt
1/2 tsp palm sugar
2 salam leaves
3 red lomboks/chillies
15 peteh beans
1 tbsp asam water
400 ml coconut milk
2 tbsp oil
Haluskan:
Bumbu:
5 red lomboks
2 keluak / kluwek
1/2 tsp shrimp paste
5 shallots
5 cloves of garlic
Cara Membuat:
preparation:
Cut the liver into 2x2 cm pieces. Cut the potatoes into cubes and the lomboks in slanted rings. Grate the laos. First soak the kluwek in hot water. Pound or grind the ingredients for the bumbu into a paste. Halve the peteh beans.
Heat in a pan the oil and fry the paste with the salam and galangal for 4 minutes. Add the chilies and peteh beans and mix. Then add the liver and stir until the liver changes colour. Then add the potatoes, salt, palm sugar and asamwater and mix well. Then add the coconut milk and slowly cook until done.
