Daging Panggang
aromatic spiced roast beef

500g beef (shank)
1/2 tbsp asam water
2 shallots
2 cardamom
1 star anise
2 cloves
2 cm cinnamon
1 lemongrass
1 tsp salt
1/2 teaspoon pepper
1/2 teaspoon sugar
300ml coconut milk
2 tablespoons oil
3 candlenuts
2cm kunyit
2 red chilies
4 shallots
4 cloves garlic
3 rawits
1/2 tbsp ketumbar
1/2 tsp jinten
1/2 teaspoon aniseed
2cm jahe
Cara membuat:
Cut the meat into slices 1 / 2-1cm thick. Cut the shallots into thin slices. Pound or grind the ingredients for the bumbu fine into a paste. Marinate the meat with the paste, the asam water and salt for at least 30 minutes.
Heat in a pan the oil and fry the shallots, cardamom, star anise, cloves, cinnamon and lemon grass for 2 minutes. Add the meat and fry it brown on all sides together with the salt, pepper and sugar. Mix together well. Pour in the coconut milk and let it simmer slowly until the liquid has evaporated.
Roast the meat slowly over a charcoal fire until golden brown while dripping the meat frequently with the marinade.
