Bahan-bahan:
ingredients:
500g beef (shank)
2 cm jahe
2 salam leaves
1000 ml water
2 stalks lemongrass
5 jeruk purut
100 g galangal, grated
1 tbsp ketumbar
1 tbsp asemwater
oil
 
Haluskan:
bumbu:
5 shallots
5 cloves garlic
3 nuts kemiri
1 tsp salt
1/2 teaspoon pepper
1/2 tsp jinten
1/2 tbsp palm sugar
 
Cara membuat:
preparation:
Heat in a pan the water and cook the meat together with the jahe and the salam, until done. Remove the meat from the pan and cut into thin slices. Leavew 500 ml broth in the pan behind.
Pound or grind the ingredients for the bumbu fine into a paste and add it to the broth along with the lemon grass, the jeruk purut, the laos, the ketumbar and asem water and bring to a boil. Add the meat and let it cook until the liquid has evaporated. Take everything out of the pan.
Heat oil in a pan and fry the meat together the spices until brown and serve.
